Seattle might be a city known for brewing up a lot of coffee, but May 9th through 19th is “Seattle Beer Week” spotlighting another kind of brewing and beverage. North Coast Brewing beers will be a major highlight of the week at The Back Door Brewers Dinner on Thursday, May 16 from 6 to 10 pm. Food Pairing: Old Stock Ale with Candy Cap Mushroom Bread Pudding

North Coast Brewing’s Brewmaster Mark Ruedrich joined Loretta Evans, Food & Beverage Manager, to create a five-course meal featuring North Coast Brewing’s award-winning ales paired with wild mushroom dishes. You can re-create parts of the the meal or glean ideas for your own feast. In most of the recipes you can substitute mushrooms you find in your local market. We think you’ll enjoy the synergy of our hand-crafted ales paired with food.

Dessert: North Coast Brewing Old Stock Ale and Candy Cap Mushroom Bread Pudding with Old Stock Reduction Sauce

North Coast Brewing Old Stock pourOld Stock Reduction Sauce (make in advance)
Ingredients:
40 oz. Old Stock Ale
1½ cups granulated sugar
4 whole cloves
2 star anise
2 cinnamon sticks
6 whole black peppercorns

Put all ingredients in a heavy bottom sauce pan and bring to a boil. Reduce heat and simmer for 1 hour. Strain sauce to remove spices, put back in pan, keep heat low and reduce to syrup. This takes about 3 hours and will last up to a month in the refrigerator.

Candy Cap Mushroom Pudding
Candy cap mushrooms are the dessert mushroom. They are sweet and smell like maple syrup. You can purchase dried candy caps online. This recipe serves 4.

Ingredients:
1 loaf brioche (found at quality bakeries) – here’s a link to a recipe if you want to bake your own
6 oz. white sugar
½ cup dried candy cap mushrooms
8 oz. heavy cream
2 oz. dark brown sugar
9 oz. + 2 oz. milk
2 eggs plus 1 egg yolk
¼ cup turbinado sugar

Cut brioche into cubes and place in a buttered casserole dish or a 13” x 9” enamel or glass pan. Grind white sugar and dried mushrooms together in a food processor and set aside.

Candy Cap Bread Pudding with Old Stock Ale ReductionIn a heavy saucepan, combine cream, the mixture of white sugar and mushrooms, the dark brown sugar, and 9 oz. of milk and bring to a boil. In a large bowl, whisk eggs and remaining 2 oz. of milk. Slowly pour the cream mixture into the eggs, stirring constantly. Strain the egg/cream mixture through a fine mesh screen over the brioche. Let the bread absorb the mixture. Sprinkle the top with the turbinado sugar and bake in a 300° oven for 1 hour 10 minutes.

Serve on dessert plates swirled with Old Stock Ale reduction sauce and a glass of Old Stock Ale.

Old Stock Ale 2013 Release

North Coast Brewing Old Stock Ale 2013We’re excited to announce the much anticipated release of our 2013 vintage Old Stock Ale. Since it sprang onto the beer scene in 2000 with the award of a Platinum medal at the World Beer Championships, Old Stock has won two Great American Beer Fest medals as well as additional WBC medals.

Brewed in the classic English old ale tradition, the Old Stock recipe includes Maris-Otter malts, Fuggles and East Kent Goldings hops and delivers a very friendly 11.9% ABV. The brew’s loyal fan base has learned that the beer cellars beautifully and can be laid down, literally for years, with the rich, winey flavors becoming softer and even more seductive with age.

“I think this is one of the finest beers we produce,” says Brewmaster Mark Ruedrich. “It has an elegance that transcends the usual expectations of beer. We’re quite proud of it.”

Audio Interview with Brewmaster Mark Ruedrich on Beer Obsessed

Thanks to BeerObsessed for posting his great interview with Brewmaster Mark Ruedrich! Here’s an excerpt from his blog post.

Thanks to Mark Ruedrich and North Coast Brewing Co. for taking the time to do the interview and for his hospitality in general.

We talk about why he came to Fort Bragg (mainly due to his love of Steinbeck and tidepools).  We talk distribution: how far and wide North Coast beers are (45 states and 7 countries). Also plenty of great info on his beers, how he formulated Old Rasputin, other beers, etc.  The last third of the interview is a tour on the production floor including: the brew system, fermentation tanks, bottling, and his cold storage area. Mark talks about future expansion and also a bit about his barrel program (yes, more good things to come in barrels).

Old Stock Ale Vertical Tasting in Smithsonian Mag

“In a dark cellar at North Coast Brewing Company, the beer bottles endured the slow crawl of time. Years plodded by, the Chinook salmon industry crashed, whales migrated past going north, then south, then north again, and one American president replaced the next—until finally, on a recent afternoon in August, five aged bottles of Old Stock Ale saw daylight. I was lucky enough to be there, along with the brewery’s owner, Mark Ruedrich, and the company’s two brewers, Patrick Broderick and Ken Kelley, for a very special event: a vertical tasting. In a vertical, the drinkers taste multiple bottles of progressively older vintages of the same beer (or wine) in order to observe how the beverage grows and matures (or, if it happens to be the case, deteriorates) through the years. We started with the 2012 Old Stock Ale, and we noted the 12-percent alcohol beer’s bright and fresh youth, with its sharp and brassy scents of prunes and sherry. Then we stepped back three years and found in the 2009 bottle a fudgier, thicker version of the last. Next, we re-entered the George W. Bush era and tasted the 2007. The sharp, vibrant esters of the beer’s younger days had softened into something bittersweet, with distinct notes of marmalade. We dug deeper still into the strata of the years, back to 2005. The beer was a shade darker now and with a slight tartness of acidity in the rich layers of flavor. Now, think back: Where were you in 2003? I was just entering a long and homeless stint of trekking through Baja California, when I could live on a dollar a day but didn’t know a pilsner from a porter—and when Ruedrich and his brewers were just putting caps on the fourth vintage of Old Stock Ale. Opened nine years later, the beer gave off a heavy, bready smell thickened with notes of molasses and whiskey. In the mouth, it was soft and creamy. And we went back further still, into another era of modern society—when the Fort Bragg salmon industry was still afloat, and when people everywhere could still walk through airport security with their shoes on and, no doubt, with a bottle of wine in their carry-on. And with just the slightest hiss of escaping gas, the 2001 Old Stock came open—a creamy, thick, velvety beer of time-reduced carbonation but still delicious and alive. “Is there a point where this beer peaks?” I asked. “We haven’t seen it yet,” Ruedrich said of the Old Stock, which was first released in 2000. Old Stock Vertical Pairing at Craft Brewers Conference

Old Stock Cheese PairingOn May 3, we raided our library of rare beers for the Craft Brewers Conference to organize a vertical offering of our award-winning Old Stock Ale, featuring eight vintages going back to 2001. These amazing beers were paired with a selection of artisanal cheese including Valdeon from Spain; Colston-Bassett Stilton, Lincolnshire Poacher, and Keen’s Cheddar from England; and San Joaquin Gold and Rogue Creamery Blue from the USA. We heard from many industry leaders at the event that the Old Stock tasting was the highlight of the conference.

Old Stock Ale has been brewed by North Coast since 2000 as an annual vintage-dated limited release made with Maris-Otter malt, and Fuggles and Kent Golding hops. It has won medals at the World Beer Championships and the Great American Beer Fests among others and has been described as “Superlative! Demands respect and deserves every ounce of it.”

Otsuchi Recovery Fund Commemorative Release

North Coast Brewing Old Stock OtsuchiThis month we are releasing a special edition of Old Stock Ale to benefit our sister city, Otsuchi, Japan. When the 2011 tsunami struck northern Japan, Otsuchi was one of the hardest hit communities, and this charming 800-year-old city was leveled with an unimaginable loss of life and property.

CBS recently devoted a 60 Minutes episode to the Otsuchi disaster and interviewed Ken Sasaki, catalyst for the sister city program. Sasaki made it clear how important the Fort Bragg sister city relationship has been in helping to give Otsuchi the encouragement to rebuild and to maintain their “Never give up” attitude.

The people of Fort Bragg have sent over $250,000 to help, but more importantly, they sent their love. As a continuation of this support, North Coast Brewing makes a donation to the Otsuchi Recovery fund for every bottle of Otsuchi Old Stock Ale sold. North Coast Brewing invites you to enjoy this bottle with friends & celebrate the recovery of Otsuchi.

SFWeekly‘s Blind Tasting for Best Barleywine:
North Coast Brewing Company Old Stock Ale (Fort Bragg, Calif.): 9 points. Honey- and rose-colored and with minimal head, this was the panel’s uncontested favorite. Nothing about the beer screamed “barleywine,” but the marked aromas of applejack, cherry, oak, bourbon, and bread, along Old Stock Alewith hot flavors of boozy fruit, caramel, and very faint smoke, earned it the warmest reception.
