End of Summer Tradition with Red Seal Ale

If you enjoy a good backyard barbecue and have the urge to do a final celebration as autumn looms, you are not alone. This longstanding tradition in America of gathering together with family and friends at the end of summer dates back to the early North American settlers. Although Americans didn’t invent the tradition or method of barbecuing meat, it continues to be a favorite summertime activity.

One thing is for sure, Americans love barbecues in the summer! Whether by a pool, grassy lawn, or fire pit, the art of barbecuing is a social occasion. It’s also a good excuse not to cook in a hot kitchen and cooking outdoors turns preparing food into a fun event that begs for friends and family members to gather in the open air and keep the chef company with a cold beer.

When Mark Ruedrich opened the Pub at North Coast Brewing Company in 1988, he knew that good food and craft beer would be a welcome addition to the coastal town of Fort Bragg, California.

This was also the year that Red Seal Ale was crafted and introduced to the public. Ruedrich created Red Seal Ale to be the perfect beverage to pair with grilled meats. So much so that he experimented with marinades and sauces using his delicious beer.

To celebrate the end of summer we searched our recipe archives for the perfect marinade to enhance whatever you throw on the grill. End-of-summer barbecues are a time-honored tradition, a final chance to revel in the joys of the summer sunshine before the season changes. So, invite your favorite people over, fire up the grill, and celebrate the season’s end with grilled meats that are bursting with flavor. You can’t go wrong with Ruedrich’s Red Seal Ale!

Try your hand at our Red Seal marinade! Here’s a simple and flavorful recipe to elevate your end-of-summer BBQ:

Ingredients:

  • 3.5 lbs. meat of your choice (Mark’s favorite is 4 New York steaks)
  • 1/2 cup olive oil
  • 1 cup Red Seal Ale
  • 1/4 cup lemon juice
  • 4 tablespoons soy sauce
  • 4 tablespoons Worcestershire sauce
  • 1/2 teaspoon of Tabasco
  • 4 cloves garlic, crushed.
  • 1 teaspoon Kosher salt
  • 1 teaspoon sugar
  • 1 teaspoon dry mustard
  • 1 teaspoon ground black pepper

Instructions:

  1. Mix Ingredients: In a bowl, combine the Red Seal Ale, olive oil, soy sauce, lemon juice, crushed garlic, Worcestershire sauce, Tabasco, sugar, salt, dry mustard, and black pepper. Whisk until the sugar is dissolved and all ingredients are well mixed.
  2. Marinate: Place your meat in a shallow dish. Pour the marinade over the meat, ensuring it is fully covered. Cover the dish and refrigerate for 8 hours.
  3. Grill and Enjoy: Remove the meat from the marinade and let it come to room temperature before grilling. Cook to your desired level of doneness and allow the meat to rest for a few minutes before slicing.
  4. Garnish: Make your favorite herbed butter recipe
  5. Sides: Serve grilled asparagus tossed with Parmesan or fresh, hot, salty fries
  6. Use a bottle opener: Open a cold, crisp, delicious bottle of Red Seal Ale to compliment your meal.
